Without a doubt, this collection features our staff and customer single origin favorites that have weathered the test of time. This monthly custom roasting collection consists of specific coffees, recommended at 1 or 2 roast levels. Our roasting teams have cupped at specific temperatures and recommend these featured coffees, with cupping scores over 85.0 and considering attributes of bean durability, sizing, and varietals, acidity, aroma, flavor nuances, sweetness, balance, and body/palate judging on non-bitter and non-sour aftertaste, as well as lingering finish (10 seconds) in the cup.
