Please store properly in an air-tight container, away from light, moisture, extreme temperatures, & oxygen. Once the beans are transferred into an air-tight container, please store in a dark pantry or kitchen cupboard for maximum freshness dating to up to 8 weeks.

A magical small round bean filled with intense sweet aromas. Its distinctive nuttiness with a hint of soft fruit, combined with low acidity creates a well-balanced clean cup. Adding some Peaberry in an espresso blend will produce an amazing silky, rich créme.

The heart of Daterra’s quality control is their Penta System, divided into five main categories: Planting, Harvesting, Drying, Processing and Sorting, Warehousing and Packaging. The Penta System is a set of technological procedures developed by Daterra engineers to ensure quality consistency. The quality delivered is, the most important output of the system. Every stage of this unique processing system has been designed to only select the coffee beans that match the high quality window of Daterra. From picking to shipping, only the perfect beans remain in the process.

Planting

Contrary to what many people think, our producing area is not big. Actually it is a series of small farms that make up our whole coffee growing lands: more precisely Daterra is divided in 216 mini-farms, of only 5 to 15ha. Each of them is traced in a GPS based system, and we know all history and information about every little area, as if it was a single plantation in a farmer’s backyard.

 Harvesting

Each terroir is harvested individually, based on the optimum maturation level of the cherries. This moment is determined by cupping the coffee before harvesting as many times as we need, until it reaches the best ripening spot.

Separation

Those wonderful coffee cherries must be separated and sorted to produce the very best coffee beans. Cherries are selected by its natural maturation stage, in a new unique technology. It guides each coffee cherry individually to the right maturation group it belongs. It is a process that took over 10 year to be designed, developed and built. 

Drying

Beans are dried with precision, to the right levels of moisture and are then taken to “rest” in wooden silos for over 40 days, softening its taste and highlighting all the positive attributes that will be later found in the cup.

Sorting

All minor defects are sorted out in a complex sorting process that uses from screen size and a modern density separation, to a set of 5 electronic sorters. Those sorters work with different and complementary light-sorting systems, which narrow defects down to the lowest levels. The output is an extremely clean and pure coffee batch, containing only the most perfect beans produced with lots care by our people. 

Packing

Penta Pack® is an outstanding package for excellent green coffees. It is composed of a carton box with two foiled bags inside. The content goes through vaccum and inert gases insertion. Each bag weighs 12,10 kg / 26 lbs and the total box weight is 24,2 kg / 53,25 lbs. It is extremely easy to handle and it has proved to keep – and in some cases to improve – coffee quality for over 3 years storage. Developed by Daterra the Penta Pack® is patented internationally.

Daterra was conceived in the 80’s, when the term “sustainability” was not even popular as it is today. However the Daterra Coffee project was planned to produce specialty coffee, grounded on environmental preservation and social development. 

Steady climate, dry-fresh winters, warm-wet summers. Dry winds in pleasantly hot days and refreshingly cool nights. Sounds like the dream place for one’s vacation. In fact it is the perfect condition for amazing beans to be grown. This is what you find in the region where Daterra farms are located.

Our farms in the city of Patrocínio are the oldest coffee plantations in Brazilian Cerrado region, and it is amongst the best coffee producing areas in the country. All plantations are located at an average altitude of over 3.000 ft and some terroirs are around 4.000 ft.

Wind, sun and soil are exceptional for Arabica trees. The diverse altitudes and microclimates create conditions that will later surprise the palate with a large range of flavors from velvet-chocolaty to bright-flowery profiles.

Daterra was Brazil's first sustainable coffee farm. In 1999, Daterra became ISO 14001 certified and in 2003 became Rainforest Alliance certified, another first for Brazil.

Very Mild

Hard to compare coffee over time, but this new Brazilian peaberry seems especially mild in flavor. I do like that it seems also to be low acid, but I prefer a cup with more distinct taste.
