Our Organic Mexican Swiss Water decaf coffee is a delicious mild bodied, cupped at medium roast. This specialty Organic Mexican coffee is naturally water decaffeinated and exudes a smooth body with a crisp, slightly nutty finish. The overall cup is mild, fragrant, sweet and 99.9% caffeine-free. This coffee is an ideal choice for decaf lover's who want a mild flavorful coffee without bitterness.

This Mexican Chiapas coffee is decaffeinated using the Swiss Water Process method, a natural process which uses no chemicals and only water to extract caffeine from the coffee beans. The process is not harsh on the coffee, leaving true flavor behind without the astringent aftertaste that some traditionally decaffeinated coffees possess.
Mexico’s diverse geography, from the soaring altitudes of the country’s four mountain ranges to the beautiful coastal regions along the Pacific, supports diverse farming practices and a broad variety of crops. Chiapas is the country’s southernmost state, home to the Sierra Madre de Chiapas Mountain range. To its west are the coffee growing regions of Oaxaca and Vera Cruz, but it is the beans of Guatemala’s Huehuetenango region, directly to the east, with which Chiapas coffee shares so much character. Farmers in Chiapas have begun a transition back to organic farming techniques as a way to achieve self-sufficiency and to create sustainability for their communities. The continued development of a network of Fair Trade farmers’ cooperatives is helping local people slowly improve their quality of life. The state of Chiapas is located in the Sierra Madre Mountains and receives the perfect combination of rainfall and sunshine to create this strictly high grown bean. A hard bean that takes a dark roast well. I would use this coffee in French or Italian roasts but also cups well in the City - Full City range. Chiapas, the tropical jungle that is the most southern eastern part of Mexico, borders with Guatemala. Chiapas is the coffee little brother of Guatemala's Hue Hue Tenango region, and this comes through in the cup. Higher in altitude, Chiapian coffees are brighter, sweeter, with a clean lingering finish in the cup.
My favorite coffee to drink when the day is late. The flavor is fantastic and I can still sleep later after enjoying this decaffeinated coffee. Superb!

It's something that I needed for evening coffee. My first roast of it was medium dark. It was great. My second batch of it a bit darker. Haven't brewed it yet. Looking forward to it.

First time in my life i had any kind of decaf. I was afraid this would not taste good due to the comparatively low price. Based on my 1st roast, it seems to degrade in flavor fast once roasted. Tastes great even right after roasting cool-down and for a couple more days but then started to develop a bitter rancid dull taste after that.

I have not roasted this batch as of yet. My customers really love the other SWD I have roasted. This is my first time Roasting a Mexico SWD. For now I rate it a 5.
