The Cup That Started It All

Ethiopia is the birthplace of coffee — and nowhere is that heritage more alive than in the highlands of Yirgacheffe. To mark National Coffee Day, we're shining a light on one of the world's most celebrated single-origin coffees, fresh roasted to order in small batches.

Origin & Terroir

Yirgacheffe sits at elevations between 1,700 and 2,200 meters in the Gedeo Zone of southern Ethiopia. The combination of rich red-brown soil, dense forest shade, and equatorial highland climate creates conditions that produce beans of exceptional complexity — naturally fragrant, dense, and layered with fruit character that no other region replicates.

The Washed Process

Our Grade 1 lots are fully washed (wet-processed): ripe cherries are depulped, fermented in water tanks for 36–72 hours to break down the mucilage, then dried on raised African beds. This intensive process strips away fruit residue, letting the bean's intrinsic terroir shine through with startling clarity. The result is a clean, bright cup with pronounced floral aromatics rather than the heavier fruit-forward character of natural or honey-processed coffees.

Grade 1 — What It Means

Ethiopia uses a rigorous national grading system overseen by the Ethiopian Coffee and Tea Authority. Grade 1 is the highest classification — fewer than 3 defects per 300g sample, moisture content within tight tolerances, and only beans from certified specialty-producing regions. It's the benchmark for traceable, premium Ethiopian coffee.
